Low/High Fat Proteins

Low Fat:

Venison, Rabbit, Pheasant, Veal, Pigeon, Lamb Tripe, Horse, Quail, Veal.

High Fat:

Ox/Beef, Lamb, Duck.

Chicken and Turkey - High in fat if carcass or with skin on.  Low in fat if no skin.

Pork and Goat - can be high or low depending on the cut.
